Also known as Sauce aux Amandes du Var, this is an almond, anchovy and mint paste for toast, fish and vegetables.
Makes about 1 cup
Combine the first 5 ingredients, either in a mortar and pestle or food processor, and gradually add the oil until the mixture is chunky. Serve on little slices of toasted ficelle or Sabato Crostini.
