Green Salad with Walnuts & Verjuice Dressing
serves 4 - 6
6 handfuls salad greens (rocket, watercress, cos, gourmet salad mix)200g shelled Kernelz Walnuts Pieces
Preheat oven to 220°C.
Place Kernels Walnuts Pieces in a roasting pan for about 5 minutes, tossing to prevent the nuts from burning. Roast till lightly coloured and smelling toasted. Allow to cool.
Dressing:
Clove of garlic
125ml Lapalisse Walnut Oil
2 Tbs The Vineco Verjuice Riesling
2 Tbs lemon juice
Maldon Sea Salt and freshly ground black pepper
Rub the cut clove of garlic over the inside of a salad bowl and discard.
To make the dressing, whisk the Verjuice Riesling and lemon juice with a little Maldon Sea Salt. Slowly whisk in the Lapalisse Walnut Oil until blended, then season with the pepper. Toss the salad greens and Kernelz Walnuts Pieces with the dressing until lightly but evenly coated.
A handful of fresh green grapes would make a delicious addition.
