Truffles from the best truffle territories in the south of France; Perigord, Quercy, Gard, Drome, Tricastin, Vaucluse and Bouche du Rhone are harvested from mid November till mid March. They are gently brushed to remove any grit and dirt, cleaned and then graded ready to be processed they are preserved in tins or jars. This process sterilizes the truffles while maintaining the maximum true fresh truffle flavour.
