Chorizos Garcia
Javier Garcia was born in Cadiz, and raised in Madrid in an atmosphere where daily buying of fresh produce and eating well was nurtured from childhood. When he moved from Spain to New Zealand, Javier made the change from practising law to opening his own restaurant: the Curator's House in Christchurch, which he has run for the last 11 years, and will be opening again once it has been restored following earthquake damage.
Seven years ago he began making his own chorizo, carefully researching methods and adhering to his principles of quality, flavour and respect for method and terroir. Two years ago, customer demand led to the establishment of Chorizos Garcia, making his chorizo available for purchase.
A recent break took him to Badajoz and the Pyrénées to further research factors contributing to the excellence of his product and to extend his range to include both fresh and cured chorizos.
Javier also specialises in cooking paella, which he has mastered after many years of sharing secrets of the masters such as Pepe el Gordo.
